To tell you the truth, I hardly ever like any of the default controllers for 
any system that I own, save for the Japanese Saturn pad and the Neo Geo pad 
(the joystick is a beautiful thing too.) Since I play a lot of fighting 
games, you can imagine why. If I am allowed to include controllers from 3rd 
parties, I'll break it down as so (starting with the Duo since this is the 
Turbo-list):

Duo
Innovation's Arcade Stick: really durable, can change the stick as "mushroom: 
or "!" design.

NES
NES Advantage: hated the default pads, and couldn't stand the MAX. All 3rd 
party controllers were horrible, but the Advantage was the diamond in the 
rough for the NES player--if you had the $45 to shell out (at the time, that 
was a lot of money for me!!)

Genesis
Innovation Arcade Stick: did I mention it has attachments for the 
Genesis/Megadrive?

SNES
Innovation Arcade Stick: and for the SNES/SFami?

Neo Geo
Default Neo Cart joystick: the Inno Arcade stick has attachments for the Neo 
Geo, but doesn't win here. The Neo sticks get my vote for the best joysticks 
ever made for any console.

Saturn
Japanese Default Saturn pad: These were just designed with fight-game fans in 
mind (course I wouldn't use anything else for Radiant Silvergun either.) 
Works for everything else for me as well! Why they changed them for the 
initial US release was beyond me.

PSX
Haven't really found a controller that I really like using for the PSX yet. I 
use the default Dual Shock most often, but I don't enjoy using it.

Dreamcast
Since the DC joysticks won't work for every game, it really depends on the 
game. The default DC controller works well for pretty much any game, but for 
some fighters, you just gotta have the Agetec stick.
